What Are The Different Types of Edible Seaweed, And How Do You Cook With Them?

While nori is a popular type of seaweed and is available in many forms, there are other edible varieties including nori, wakame, kombu, and hijiki. Nori is used to wrap sushi and onigiri rice balls and can be eaten on its own as a snack. Wakame is used in seaweed salads with a sweeter umami taste than nori and smoother texture. Kombu is sold in sheets and can be boiled to make dashi, or soup stock. Hijiki is often shredded and used to top rice and salads.
